I'd go with Spruce for the visual and tonal change over time.
The primary difference between a spruce guitar and a cedar guitar is that, unlike a cedar guitar, a spruce guitar is made out of spruce.

Cedar is softer and scratches much easier. There are many kinds of spruce, European Spruce is usually very white and Red Spruce is darker.
I'm enjoying the complete lack of reference to anything measured or even remotely capable of measurement, as if acoustics was one of the dark arts. The height is when he comes close to admitting that the color of guitar is a major factor in these judgments!
Also, cedar tops are way more prone to cracking as they age, especially if the piece you got isn't ideal, be it on a molecular level, or just poorly stored/dried by the luthier.

I've never heard a guitarist say anything about the tone quality of guitars other than 'brighter' and 'warmer', even in this roundabout way it's basically saying the same thing
I like cedar, warmer sounding, and less prone to warping.

I have a Sanchis Carpio model 40 from 1980 with a spruce top and rosewood back and sides. It is one of the finest sounding guitars I've ever played under 3000 euros.

They sound exactly the same.
So the trick with wanting a warmer and softer tone out of your spruce guitar is to wait around for 50-100 years. Ok, got it haha

Good short breakdown. I own both a spruce top (Alhambra) and a cedar top (Alvarez). When clarity of sound is most important, I play the spruce top. When volume is most important, I play the cedar top.

I presently own a Spanish built Alhambra cedar top guitar after having owned several traditional classical guitars with spruce tops. I honestly cannot tell any significant difference berween them soundwise. Practically ecually good, but somewhat different.

That's not how overtones work. Warmer sounds come from less upper harmonics not more. You are correct that cedar would be warmer but have it backwards as to why.
So it would need 20-30 years for Spruce turn brownish?
But I have a solid Spruce top that still yellowish… ????
