I don't know any of these pieces but none of them seem scary to learn, so I think I must be approaching intermediates' level. Progress feels good.

How about Julia Florida by Barrios. There is tab for it on the Internet.
Caprichio Arabe was not a wise choice because masterpieces contrast against contemporary pieces expose trivia by comparison .

as an intermediate guitar player with 10 years on and off the guitar (typical self learner mistake) I should give you the folk style pieces that were so hard for me, I ended up buying Martha Masters "The total classical guitarist" and Patrick Steinbach – "Irish Guitar Workshop" to start learning reading notes without Tabs.
– piece 1: Davy Graham – Angi (sometimes spelled Anji)
– piece 2: Nick Drake – Day is done
The album "Pink Moon" by Nick Drake introduced me to cgcfce tuning and other beautiful stuff. (Check out the Nick Drake Tabs by Chris Healey. I envy you, Beatrix, as a grandmaster guitarist you should have no problem to even play songs from the "Bryter Layter" album).
My journey continues through Andi Saitenhieb acoustic blues guitar learning material. I even bought "Alfred's Essentials of Music Theory – a complete self-study course for all musicians". I also rely on the website "classical guitar shed' by Allan Mathews, also a classical guitar youtuber. I bet you know the name by passing. Right now, I take it slowly, learning "Canon in D" and "Gymnopedie no 1". I stumbled upon your channel, because I always look out for practise tips and new beginner/ intermediate pieces to learn in the years to come. Also, as a german born guitarist it is wild, that the international note B is spelled as an H in Germany, meaning a B-flat is a B in Germany, took me years to clear the confusion, because all german language training material differs from the english speaking world 😀
Why am I writing this? a) To give you, the teacher, an insight what the journey of a self learner can look like before finally finding the classical way (the Martha Masters introduction chapter changed my life, lol). b) I will use your guitar pieces that you upload on youtube as ear training. Usually I record myself or listen to records, but this is very welcomed addition for my training sessions.
PS. If you want to have a lot of fun, please analyse all the Nick Drake tunings in detail. And also play some Final Fantasy music. Nobuo Uematsu has written some lovely stuff, also good for beginners and intermediate, I guess.

Might I ask the names of the songs played in the background while you talk? I recognised Lagrima and Mazurka, what are the others?
My suggestion is "Rain" by Morscheck and Burgmann. It's a piece written for two guitars but works solo as well! As to the why: relatively easy to play (the chord hand seems to naturally dance over the fret board) whilst the harmony manages to capture the partly cozy, partly forlorn mood of a rainy day.
Back when I used to take classical guitar lessons as a teenager, our teacher had us perform this on stage, the first piece I really LIKED to 😀 It remained one of my favorites untill today, a perfect one for when someone hands you a guitar to "play something"

I don't know why, it's not really similar, but whenever I hear The Sheep on The Mountain I tend to think of Howl's Moving Castle.
