My question is: why not do this baking, fresh strings, set up and feet work before an order is made so the guitars are ready to go? Seems like a waste of strings lol

And this claim is a lie. They literally did tests where they built brand new guitars of the exact same wood species and compared them to the old one, and they did it over violins as well, and the ones playing them, along with the ones listening, blindfolded, could not tell the difference. So this is a pure myth.
Is there a eletroacustic model for these?
Why do you change the strings? Isn’t that double the cost? And why don’t you put a good ones in the first place?

If you play your guitar often and rub them nicely with a soft cloth that doesn't scratch, and then do that for years, your guitar will look and sound vintage… due to becoming vintage from your playing it and polishing it. But if you must rip holes in your jeans to make them look like they are old and torn… okeedokee, then. Pay for it up front.
It also makes it brittle so thats a big downside
