Amp sim sounds thinner
I feel like if you're smart, you can emulate room tones with amps as well. If you prefer you can use a tape record emulator if that's your style.
But regardless, I find that people tend to leave their favorite tones up to choice. Modern metal nowadays usually sounds pretty robotic at times. Almost too perfect. But there's also other people who like grunge and the imperfections.
But then again, amp sims can absolutely simulate different rooms, different mics, different cabs, different mic placements. Some amp sims also let you replace the speakers from cabs! It becomes indistinguishable. You just gotta know what makes them sing.
It’s not about the tone!!! It’s about the feel!!! Cranked tube amp have so wide and spacious dynamics and breathes with your playing like nothing else. Period.

Clean tones? It’s a toss up. To my ears, it’s with distorted tones where you hear the difference. Especially the kind of edge-of-breakup tones that Fenders do so well.
Profilers get the tone, but don’t respond to changes in technique the same way. Modelers get the responsiveness…but can’t quite get the actual tone quite right. You’re constantly having to tweak the high end to get rid of fizziness.
Which amp simulator is that?
I finally came to understand that I was the only one who ever heard my amps. As soon as a mic got put in front of it, what everybody else heard was the mic and PA, NOT my amp.
Now all I lug to gigs and recordings is a guitar and a modeller. At 60 years old, that's a gift.
What amp sim is he using?
I’m a pianist/ keyboardist primarily, but when I do put down guitar tracks the Line6 FX 100 fits into the mix perfectly. Not saying that it would work as well for live situations (since I only do studio), but it fills the bill nicely for my applications.
Real amp sounded airy and had a punchier ambience to it for cleans.
I think the amp sounds still clears pretty significantly on this one.

The issue with the sim is just that he didnt have the right settings for the mic placement and the reverb of the room. He simply used the default setting where the mic is placed optimally and the room reverb is non existent ofc
Sims are a great tool, but they aren't perfect. They always seem to be missing some high-end information in them. But in a mix, I doubt most people could tell. Certainly not non-musicians.

For me, the answer is… depends. I will say something that nobody gives a sh… I mean, is irrelevant, but!
When I was younger, I didn't care about what amp I used, I only had a need to have something decent enough that made my guitar sound. Then I had a multi FX that I never could get a good tone out of it, but it was because of my poor knowledge about the nature of each effect. Then I start to building my own sound with individual pedals from different brands, quality and prices, at that moment I purchased an Orange Amp, a real good one and everything changed, I finally got what a real good thing could sound. Time passed and Covid happened, I sold my amp and some of my more decent pedals… and finally today I play with some kind of hybrid stuff, a real pedal board with an amp sim running on my ipad… and it sounds good but does not feel exactly the same for me.
Conclusion: I don't really care if Metallica or Tim or somebody else runs an entire show with Virtual FX, if that is how they solved stuff, then is good. Real amps or virtual FX amps are affected by the place of the venue, if that place is an acoustic mess then having a good sound even using real gear is complicated… Real gear will always feel organic and funny to play with, will be always better, on the other hand Virtual stuff can be close but does not feel the same but also is incredibly easier to handle, at the end of the day most people just want to hear the freaking song live or recorded and if sound cool good, if not then…
We are close. And even acceptable. But clean tones are lacking a bit off life. The biggest short coming being spring verb emulations. A few more years and we will superior in all ways

its a good question, im 50 so im old school, I prefer real gears…
My personal viewpoint is I cant tell a difference on youtube, also a huge stadium band using fractal or something similar i probably couldn’t tell either… but for me personally performing in a small venue, I LOVE using a valve amp. I even love seeing a good old Marshall Stack… I also don’t have a problem with guitarists who prefer amp modelling.
Most of the people who get upset with me using a half stack Marshall or combo are always guitarists though which I believe is silly.

Thinking about the difference between looking at a real aquarium vs watching a high def digital video of an aquarium on a flat screen tv… both are fine, but with the real aquarium the side view and top view are way more interesting than those viewing angles of the flat screen tv.

Nah. YouTube compresses everything to sound equal. Irl, you can still tell the difference. I've never heard a model that could delete that crispiness or sag that idealized photograph of sound. 6 algorithms get familiar because they're a frozen image. Real amps cook up something different depending on the weather. I'm not saying in any way they're no good. But real amps are technologically different. The physics are different.
Emulation was notably thinner. Real amp had more dimension to it.
none of my emulators taker other pedals the same way that a real amp does. as soon as you add a fuzz pedal it gets weird.
